Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the sugar and butter until creamy.
  3. Add in the grated zucchini, egg, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. If using, fold in the chopped walnuts.
  7. Drop spoonfuls of the dough onto a prepared baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool before frosting.

Notes

  • For extra flavor, add a pinch of nutmeg.
  • These cookies can also be made without walnuts for a nut-free option.
