White Chicken Chili

A warm and comforting white chicken chili recipe that’s easy to make and packed with flavor.

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can white kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and chop.
  2. In the same pot, add diced onion and garlic; sauté until translucent.
  3. Add the chicken breasts, broth, cumin, and chili powder; bring to a boil.
  4. Reduce heat, cover, and simmer until chicken is cooked through. Remove chicken, shred, and return to the pot.
  5. Add the beans, corn, milk, and cheese; stir until heated through.
  6. Top with chopped turkey bacon before serving.

Notes

  • This chili can be adjusted for spiciness by adding more chili powder or jalapeños.
  • Serve with tortilla chips for a crunchy side.
