Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 potatoes, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add vegetable broth, potatoes, zucchini, green beans, diced tomatoes, thyme, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
