Vegan Sweet Potato Chili

A hearty and delicious vegan sweet potato chili perfect for those cozy nights.

Ingredients

  • 2 cups diced sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add garlic and cook for another minute until fragrant.
  3. Add sweet potatoes, black beans, kidney beans, corn, diced tomatoes, vegetable broth, cumin, chili powder, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 25-30 minutes until sweet potatoes are tender.
  5. Stir occasionally and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • This chili can be made in advance and tastes even better the next day.
  • Feel free to add any other vegetables you like!
