  • 1 pound fresh green beans
  • 2 cups mushrooms, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon soy sauce
  • 1 teaspoon nutritional yeast
  • 1 teaspoon black pepper
  • 1 cup crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the green beans for 5 minutes, then drain.
  3. In a pan, sauté onions and garlic until translucent. Add mushrooms and cook until softened.
  4. Stir in vegetable broth, coconut milk, soy sauce, nutritional yeast, and black pepper.
  5. Combine the sauce with the green beans and mix well.
  6. Transfer to a baking dish, top with crispy fried onions, and bake for 20 minutes.
