- 4 pounds bone-in short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves of garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 2 teaspoons fresh thyme
- 2 pounds russet potatoes, peeled and chopped
- 4 tablespoons butter
- 1/2 cup heavy cream
- 4 cloves of garlic, roasted
- Salt to taste
- Black pepper to taste
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and black pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.
- Add the onions, carrots, and celery to the pot. Cook until softened, about 5 minutes.
- Add the garlic and cook for another minute, stirring frequently.
- Stir in the beef broth, red wine, bay leaves, and thyme.
- Return the short ribs to the pot, cover it with a lid, and transfer to the oven.
- Braise for 3 hours, or until the meat is tender and falls off the bone.
- While the ribs are cooking, prepare the mashed potatoes. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and return to the pot over low heat. Add butter, heavy cream, roasted garlic, salt, and pepper. Mash until smooth.
- Remove the short ribs from the oven, discard bay leaves, and serve over the garlic mashed potatoes.

- For extra flavor, brown the meat in batches to avoid steaming.
- Use leftover braising liquid as a flavorful sauce.
