Tender Braised Short Ribs with Garlic Mashed Potatoes

A hearty and comforting dish of tender braised short ribs paired with creamy garlic mashed potatoes.

  • 4 pounds bone-in short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 2 pounds russet potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • 4 cloves of garlic, roasted
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and black pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.
  4. Add the onions, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  5. Add the garlic and cook for another minute, stirring frequently.
  6. Stir in the beef broth, red wine, bay leaves, and thyme.
  7. Return the short ribs to the pot, cover it with a lid, and transfer to the oven.
  8. Braise for 3 hours, or until the meat is tender and falls off the bone.
  9. While the ribs are cooking, prepare the mashed potatoes. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  10. Drain the potatoes and return to the pot over low heat. Add butter, heavy cream, roasted garlic, salt, and pepper. Mash until smooth.
  11. Remove the short ribs from the oven, discard bay leaves, and serve over the garlic mashed potatoes.

Notes

  • For extra flavor, brown the meat in batches to avoid steaming.
  • Use leftover braising liquid as a flavorful sauce.
