Stuffed Roasted Butternut Squash

  • 1 medium butternut squash
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup black beans
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half and scoop out the seeds.
  3. Roast the squash halves in the oven for about 30-40 minutes until tender.
  4. In a saucepan, combine quinoa and vegetable broth; bring to a boil and then simmer for 15 minutes.
  5. In a skillet, sauté onion, garlic, and red bell pepper until soft.
  6. Add black beans, quinoa, spices, and mix well.
  7. Fill the roasted squash halves with the quinoa mixture.
  8. Top with cheese if desired and bake for an additional 10 minutes.
  9. Serve warm, garnished with fresh herbs.
