Stuffed Butternut Squash

Stuffed butternut squash is a warm, comforting dish that’s easy to make and delicious to eat.

  • 2 medium butternut squashes
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squashes in half lengthwise and scoop out the seeds.
  3. Place the squash halves on a baking sheet and roast in the oven for 30-40 minutes until tender.
  4. While the squash is roasting, rinse the quinoa under cold water and then cook in vegetable broth according to package instructions.
  5. In a large bowl, combine the cooked quinoa, black beans, diced bell pepper, cumin, paprika, salt, and pepper.
  6. Once the squash is done roasting, fill each half with the quinoa mixture.
  7. Return the stuffed squashes to the oven and bake for an additional 10-15 minutes.
  8. Garnish with chopped cilantro before serving.

Notes

  • Feel free to customize the filling by adding cheese or other vegetables.
  • This dish can be made ahead of time and reheated.
