- 2 medium butternut squashes
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup cilantro, chopped
- Preheat your oven to 400°F (200°C).
- Cut the butternut squashes in half lengthwise and scoop out the seeds.
- Place the squash halves on a baking sheet and roast in the oven for 30-40 minutes until tender.
- While the squash is roasting, rinse the quinoa under cold water and then cook in vegetable broth according to package instructions.
- In a large bowl, combine the cooked quinoa, black beans, diced bell pepper, cumin, paprika, salt, and pepper.
- Once the squash is done roasting, fill each half with the quinoa mixture.
- Return the stuffed squashes to the oven and bake for an additional 10-15 minutes.
- Garnish with chopped cilantro before serving.
