  • 1 pound chicken breast, diced
  • 1 cup street corn (or corn kernels)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheese
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook until chicken is fully cooked.
  3. Stir in the street corn and cook for another 5 minutes.
