Spanish Chorizo Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Spanish chorizo, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 cup kale, chopped
  • 1 cup white beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chorizo and cook until browned.
  3. Add onion, garlic, bell pepper, and carrots, and cook until softened.
  4. Stir in diced tomatoes, chicken broth, and smoked paprika. Bring to a simmer.
  5. Add kale and white beans, cooking until kale is wilted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • For a spicier kick, add a pinch of cayenne pepper.
