Spaghetti Squash With Pesto & Shrimp

A delightful and easy recipe for spaghetti squash topped with homemade pesto and succulent shrimp.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup pesto sauce
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place cut side down on a baking sheet and roast for about 40 minutes.
  5. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  6. Add shrimp to the skillet, cooking until pink and cooked through.
  7. Once the squash is done, scrape out the strands and toss with pesto and shrimp.
  8. Serve warm and enjoy!

  • Feel free to add vegetables like cherry tomatoes or spinach for extra flavor.
