  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup cream cheese
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the beans, corn, onion, garlic, cumin, chili powder, and chicken broth on top of the chicken.
  3. Cook on low for 6-8 hours or until the chicken is tender and easily shredded.
  4. About 30 minutes before serving, stir in the cream cheese until melted and well combined.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with your choice of toppings.
