Slow Cooker White Chicken Chili (Creamy + Easy!)

This Slow Cooker White Chicken Chili is a creamy and easy comfort dish that you will love!

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cans white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the beans, corn, onion, garlic, cumin, chili powder, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. 30 minutes before serving, stir in the heavy cream and cheese.
  5. Shred the chicken in the pot before serving.

Notes

  • For extra flavor, add jalapeños.
  • Serve with tortilla chips or rice.
