Slow Cooker Chicken Stew Recipe

A warm and hearty Slow Cooker Chicken Stew that makes comfort food easy!

Ingredients

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 3 cups mixed vegetables (carrots, peas, corn)
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon dried thyme
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan and sauté onions and garlic until fragrant.
  2. Add chicken thighs, cooked onions, garlic, and remaining ingredients to the slow cooker.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Once cooked, shred the chicken and stir back into the stew.
  5. Season with salt and pepper to taste before serving.
