Rotisserie Chicken Mushroom Soup – A Comforting, Quick & Hearty Meal

This comforting soup is made easy with rotisserie chicken and mushrooms, perfect for a quick meal.

Ingredients

  • 1 rotisserie chicken
  • 8 ounces mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups vegetables (carrots, celery)
  • 1 teaspoon thyme
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add sliced mushrooms and cook until soft.
  3. Shred the rotisserie chicken and add it to the pot.
  4. Pour in chicken broth and bring to a boil.
  5. Add in the vegetables and thyme; simmer for 15 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Cook for another 5 minutes before serving.
