- 3 pounds beef roast
- 2 cups red wine
- 4 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 tablespoon thyme
- 1 tablespoon rosemary
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat your oven to 350°F (175°C).
- In a large roasting pan, heat olive oil over medium-high heat.
- Season the roast with salt and pepper, then sear on all sides until browned.
- Add onions, carrots, and garlic to the pan, then cook for a few minutes.
- Pour in the red wine and scrape the bottom of the pan to deglaze.
