  • 2 cups red wine
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large roasting pan, heat olive oil over medium-high heat.
  3. Season the roast with salt and pepper, then sear on all sides until browned.
  4. Add onions, carrots, and garlic to the pan, then cook for a few minutes.
  5. Pour in the red wine and scrape the bottom of the pan to deglaze.
  6. Add beef broth, thyme, and rosemary, then bring to a simmer.
  7. Cover and place in the oven, roasting for about 2 hours.
  8. Remove from oven, let it rest, then slice and serve with gravy.
