  • 1 cup brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, melted
  • 1 can (15 oz) pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon ground ginger
  • ⅓ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, combine pumpkin puree, granulated sugar, eggs, vanilla extract, and spices.
  5. Spread the pumpkin mixture over the crust.
  6. Sprinkle the remaining crumble mixture over the pumpkin layer.
  7. If desired, add chopped nuts on top.
  8. Bake for 30-35 minutes or until set.
