  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and brown sugar.
  3. Add the pumpkin puree and vanilla, mix until well blended.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 15-18 minutes or until the edges are set.
  8. Allow to cool on the sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, add chocolate chips or nuts if desired.
