  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons maple syrup
  • 1/4 cup melted butter
  • 4 slices turkey bacon

Instructions

  1. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, mix pumpkin puree, eggs, milk, maple syrup, and melted butter.
  3. Combine wet and dry ingredients until just mixed.
  4. Preheat a skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form, then flip and cook until golden brown.
  6. In another skillet, cook turkey bacon until crisp.
  7. Serve pancakes warm with turkey bacon on the side.

Notes

  • For fluffier pancakes, let the batter rest for 5 minutes.
  • Top with whipped cream or additional maple syrup if desired.
