  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  6. Fill muffin cups halfway with batter, add a dollop of cream cheese mixture, and top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
