  • 8 oz rice noodles
  • 1 cup frozen potstickers
  • 2 cups vegetable broth
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • 1 tsp ginger, minced
  • 1 clove garlic, minced

Instructions

  1. Cook the rice noodles according to package instructions; set aside.
  2. In a large pan, heat sesame oil over medium heat.
  3. Add frozen potstickers and cook until golden brown on both sides.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add bell pepper, snap peas, soy sauce, ginger, and garlic; let cook for 5 minutes.
  6. Stir in the cooked noodles and toss to combine.
