- 2 pounds oxtail
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 2 cups macaroni
- 2 cups cheddar cheese, shredded
- 1/2 cup milk
- 1/4 cup butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Brown the oxtail in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Stir in beef broth and tomato paste, bring to a boil.
- Reduce heat and simmer for 2-3 hours until oxtail is tender.
- Cook macaroni in salted water until al dente, drain.
- In a separate pot, melt butter, add milk, cheese, and macaroni, stirring to combine.
- Transfer oxtail mixture to a baking dish, then top with the mac and cheese mixture.
- Bake in a preheated oven at 350°F for 30 minutes until golden brown.
Notes
- For extra flavor, add a splash of Worcestershire sauce to the oxtail mixture.
