  • 2 pounds oxtail
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 2 cups macaroni
  • 2 cups cheddar cheese, shredded
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Brown the oxtail in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in beef broth and tomato paste, bring to a boil.
  4. Reduce heat and simmer for 2-3 hours until oxtail is tender.
  5. Cook macaroni in salted water until al dente, drain.
  6. In a separate pot, melt butter, add milk, cheese, and macaroni, stirring to combine.
  7. Transfer oxtail mixture to a baking dish, then top with the mac and cheese mixture.
  8. Bake in a preheated oven at 350°F for 30 minutes until golden brown.

Notes

  • For extra flavor, add a splash of Worcestershire sauce to the oxtail mixture.
