One Pot Healthy Broccoli Mac and Cheese

A delicious and healthier take on classic mac and cheese, loaded with broccoli and turkey bacon.

Ingredients

  • 8 ounces elbow macaroni
  • 4 cups broccoli florets
  • 6 slices turkey bacon, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups chicken broth
  • 1 cup milk
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the macaroni and chicken broth to the pot. Bring to a boil and cook until the pasta is al dente.
  3. Stir in the broccoli, garlic powder, and onion powder. Cook for an additional 3-5 minutes until the broccoli is tender.
  4. Reduce heat, add the milk and cheese, stirring until melted and creamy.
  5. Season with salt and pepper, and fold in the crispy turkey bacon before serving.

Notes

  • For extra creaminess, add more cheese if desired.
  • Feel free to mix in other vegetables for added nutrition.
