One Pot Chinese Chicken and Rice

Ingredients

  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 pound boneless chicken thighs
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup peas and carrots
  • 2 green onions, chopped
  • Salt to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add the garlic and ginger, sautéing until fragrant.
  2. Add the chicken thighs and cook until browned on both sides.
  3. Stir in the rice, soy sauce, and chicken broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes.
  5. Add peas and carrots, and cook for an additional 5 minutes.
  6. Remove from heat and let sit for a few minutes before serving.
