One Pot Chicken and Mushroom Orzo

  • 8 ounces orzo pasta
  • 2 cups mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the chicken and cook until browned.
  2. Add the onion, garlic, and mushrooms; sauté until softened.
  3. Stir in the orzo and cook for 1-2 minutes.
  4. Pour in the chicken broth, add Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until the orzo is tender.
  6. Stir in the spinach and Parmesan cheese until melted and well combined.
