  • 1 cup lentils
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 2 carrots, diced
  • 1 bell pepper, diced
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in carrots and bell pepper, cooking for another 5 minutes.
  4. Add lentils, beef broth, diced tomatoes, and spices, bringing to a boil.
  5. Reduce heat and simmer for 30-40 minutes or until lentils are tender.
  6. Season with salt and garnish with fresh parsley before serving.
