  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 2 packs (16 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the crushed graham crackers and melted butter until combined. Press the mixture into the bottom of cupcake liners in a muffin tin.
  3. In another bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, continuing to mix.
  4. Add the eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until combined.
  5. Spoon the cream cheese mixture over the crusts in the muffin tin.
  6. Bake for 18-20 minutes, or until the centers are set. Remove from the oven and let cool.
  7. Chill in the refrigerator for at least 2 hours before serving.
