Middle Eastern Tofu Kebabs (Vegan & Gluten-free)

These Middle Eastern Tofu Kebabs are packed with flavor and are perfect for a quick, healthy meal.

Ingredients

  • 1 block firm tofu
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, cut into squares
  • 1 zucchini, cut into rounds
  • 6 skewers

Instructions

  1. Press the tofu to remove excess moisture.
  2. In a bowl, mix olive oil, lemon juice, cumin, coriander, smoked paprika, salt, and pepper.
  3. Cut the tofu into cubes and marinate it in the mixture for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated tofu and vegetables onto skewers.
  6. Grill the kebabs for about 10-15 minutes, turning occasionally.
  7. Remove from grill and serve warm.

Notes

  • For extra flavor, add your favorite vegetables.
  • Use a grill mat for easier grilling.
