Mediterranean Chickpea Pasta Salad

  • 8 ounces pasta of your choice
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and allow to cool.
  2. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, parsley, feta cheese, and olives.
  3. Add the cooled pasta to the bowl. In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and gently toss to combine.
  5. Serve immediately or refrigerate for at least 30 minutes to let the flavors meld.
