Keto Cheeseburger Soup

A deliciously creamy, low-carb soup that combines the classic flavors of a cheeseburger in a hearty bowl, perfect for a keto diet.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower, riced
  • 2 tablespoons mustard
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the bacon grease, add ground turkey and cook until browned.
  3. Add onion and garlic to the pot and sauté until soft.
  4. Pour in the beef broth and bring to a simmer.
  5. Add the riced cauliflower and mustard. Cook until cauliflower is tender.
  6. Stir in the heavy cream and shredded cheddar until combined.
  7. Season with salt and pepper, and crumble the bacon on top before serving.

Notes

  • For extra flavor, add some diced pickles on top as a garnish.
