- 1 pound ground turkey
- 4 slices turkey bacon
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower, riced
- 2 tablespoons mustard
- Salt and pepper to taste
- In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
- In the bacon grease, add ground turkey and cook until browned.
- Add onion and garlic to the pot and sauté until soft.
- Pour in the beef broth and bring to a simmer.
- Add the riced cauliflower and mustard. Cook until cauliflower is tender.
- Stir in the heavy cream and shredded cheddar until combined.
- Season with salt and pepper, and crumble the bacon on top before serving.
