2 eggs
1 ripe avocado
2 slices whole grain bread
2 tablespoons pesto
Salt to taste
Black pepper to taste
Instructions
Bring a pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for jammy eggs.
Remove eggs and place them in an ice bath to cool.
Toast the whole grain bread until golden brown.
While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
Spread pesto on the toasted bread, top with the mashed avocado, and peel and slice the eggs before placing them on top.
Finish with a sprinkle of black pepper and serve immediately.
Notes
For creamier avocado, add a bit of lime juice.
To store, keep the avocado and pesto separate until ready to serve.
