1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 teaspoons Italian seasoning
4 cups beef broth
2 cups diced tomatoes
1 cup chopped carrots
1 cup chopped celery
1 onion, chopped
3 cloves garlic, minced
1 cup pasta (optional)
Salt and pepper to taste
Instructions
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well and form into meatballs.
In a large pot over medium heat, sauté onions, carrots, and celery until softened.
Add garlic and cook for another minute.
Pour in beef broth and diced tomatoes, bringing the mixture to a boil.
Add meatballs to the soup and simmer for 20 minutes.
If using, add pasta and cook until tender.
