  • 4 chicken thighs
  • 1/2 cup honey
  • 1/4 cup balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup goat cheese
  • 2 pounds potatoes
  • 1/2 cup milk
  • 4 carrots
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix honey, balsamic vinegar, garlic powder, salt, and pepper.
  3. Place chicken thighs in a baking dish and pour the honey mixture over them.
  4. Bake for 35-40 minutes until cooked through.
  5. Meanwhile, peel and chop the potatoes, then boil until tender.
  6. Drain the potatoes, mash with goat cheese and milk until creamy.
  7. Slice carrots, toss with olive oil, salt, and pepper, and roast in the oven for 25 minutes.
  8. Serve the chicken thighs alongside the mashed potatoes and roasted carrots.
