Enjoy a healthier version of your favorite comfort food with this delicious Healthy Mac & Cheese featuring turkey bacon.

Ingredients

  • 8 ounces elbow macaroni
  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 2 cups cauliflower, steamed
  • 1 cup low-fat milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions and drain.
  2. In a skillet, heat olive oil over medium heat and add turkey bacon. Cook until crispy.
  3. Add steamed cauliflower and cook for a few minutes until tender.
  4. In a blender, combine the cooked cauliflower, low-fat milk, cheddar cheese, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  5. Combine the macaroni and cheese sauce in a large bowl. Mix well to coat the pasta.
  6. Serve hot and enjoy!

Notes

  • For extra flavor, add some crushed red pepper flakes.
