- 8 ounces elbow macaroni
- 1 tablespoon olive oil
- 4 slices turkey bacon, chopped
- 2 cups cauliflower, steamed
- 1 cup low-fat milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cook the macaroni according to package instructions and drain.
- In a skillet, heat olive oil over medium heat and add turkey bacon. Cook until crispy.
- Add steamed cauliflower and cook for a few minutes until tender.
- In a blender, combine the cooked cauliflower, low-fat milk, cheddar cheese, garlic powder, onion powder, salt, and pepper. Blend until smooth.
- Combine the macaroni and cheese sauce in a large bowl. Mix well to coat the pasta.
