Healthy Chicken & Sweet Potato Bowls

A wholesome and delicious meal perfect for busy weeknights.

Ingredients

  • 2 cups sweet potatoes, diced
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss sweet potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20 minutes.
  4. Season chicken with paprika, salt, and black pepper.
  5. In a skillet, heat remaining olive oil over medium heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side.
  6. In the last 10 minutes of the sweet potatoes roasting, add the broccoli to the baking sheet.
  7. Once cooked, assemble bowls with sweet potatoes, chicken, and broccoli.
  8. Serve warm and enjoy!

Notes

  • For extra flavor, marinate the chicken for 30 minutes before cooking.
  • Feel free to add other vegetables like bell peppers or carrots.
