Greek Chicken Bowl

  • 1 pound chicken breast
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breast with olive oil, oregano, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until thoroughly cooked.
  4. While the chicken is cooking, prepare the quinoa and chop the vegetables.
  5. In a large bowl, combine the cooked quinoa, tomatoes, cucumber, olives, red onion, and parsley.
  6. Prepare the dressing by whisking together olive oil and red wine vinegar.
  7. Once the chicken is cooked, slice it and add it to the bowl with the quinoa and vegetables.
  8. Drizzle the dressing over the chicken and quinoa mixture and toss to combine.
  9. Top with crumbled feta cheese before serving.
