French Chestnut Soup

Warm up with this delicious French chestnut soup, creamy and packed with flavor from turkey bacon.

  • 2 cups cooked chestnuts
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat and cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sauté until translucent.
  3. Add cooked chestnuts, thyme, and chicken broth; bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Blend until smooth, then stir in heavy cream. Season with salt and pepper.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • Adjust the thickness of the soup by adding more or less cream.
  • This soup can be made ahead and frozen.
