  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chiles
  • 1 cup chicken broth
  • 1 tablespoon taco seasoning
  • 1 medium onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup shredded cheese

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add the black beans, corn, diced tomatoes, chicken broth, taco seasoning, onion, and bell pepper.
  3. Stir to combine.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken with two forks and mix back into the soup.
