1 cup pumpkin puree
1 cup granulated sugar
½ cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, mix pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until well combined.
In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually stir the dry ingredients into the wet mixture until just blended.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes or until a toothpick comes out clean.
Allow to cool before frosting.
Notes
These pumpkin bars are even better the next day after the flavors have melded together.
