- 1 cup quinoa
- 2 cups vegetable broth
- 4 slices turkey bacon
- 1 cup butternut squash, diced
- 1 cup kale, chopped
- 1/2 cup cranberries
- 1/4 cup pumpkin seeds
- 2 tablespoons olive oil
- Rinse the quinoa under cold water and then combine it with vegetable broth in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While the quinoa is cooking, preheat the oven to 400°F (200°C). Spread the diced butternut squash on a baking sheet, drizzle with olive oil, and roast for about 25 minutes until tender.
- In a skillet, cook the turkey bacon until crispy, then chop it into pieces.
- Once the quinoa is cooked, fluff it with a fork and stir in the roasted butternut squash, chopped kale, cranberries, pumpkin seeds, and turkey bacon.
- Serve warm and enjoy!
