  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup sugar
  • 1 large egg yolk
  • 1/4 cup heavy cream
  • 1 cup whole milk
  • 1 tablespoon vanilla extract
  • 3 large egg yolks
  • 1/4 cup sugar (for custard)
  • 2 tablespoons sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Add the cold butter and mix until crumbly.
  3. Add the egg yolk and mix until the dough comes together. Press into a tart pan.
  4. Bake the tart shell for 15 minutes until lightly golden.
  5. In a saucepan, heat milk and heavy cream. Remove from heat and stir in vanilla.
  6. In a bowl, whisk together egg yolks and sugar until light and fluffy.
  7. Slowly pour in the warm cream mixture into the egg mixture, whisking constantly.
  8. Pour the custard into the baked tart shell.
  9. Bake for an additional 30 minutes, or until set.
  10. Chill the tart for a few hours or overnight.
  11. Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
