Easy Healthy Ground Chicken Meatloaf

A delicious and healthy twist on a classic meatloaf, using ground chicken and turkey bacon for a lighter option.

  • 1 pound ground chicken
  • 4 slices turkey bacon
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup ketchup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, chopped turkey bacon, breadcrumbs, egg, onion, bell pepper, garlic, salt, pepper, and Italian seasoning.
  3. Mix until well combined.
  4. Transfer the mixture into a loaf pan and shape it into a loaf.
  5. Spread ketchup over the top.
  6. Bake for 45-55 minutes or until fully cooked.
  7. Let it rest before slicing.

Notes

  • For added flavor, consider mixing in some grated Parmesan cheese.
  • You can substitute chicken with ground turkey if preferred.
