Easy Gnocchi Zuppa Toscana

A comforting soup combining gnocchi, turkey bacon, and chicken ham for a delightful meal.

Ingredients

  • 1 pound potato gnocchi
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. Add chopped onion and garlic to the pot, sautéing until translucent.
  3. Stir in the chicken ham and cook for a few minutes.
  4. Add chicken broth and bring to a boil.
  5. Stir in the gnocchi and cook until they float to the top.
  6. Add heavy cream, kale, and Italian seasoning; simmer for 5 minutes.
  7. Season with salt and pepper, and crumble the bacon on top before serving.

Notes

  • For extra richness, top with grated Parmesan cheese.
  • Feel free to add other vegetables such as carrots or potatoes.
