Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • 1 large egg
  • 4 slices turkey bacon

Instructions

  1. In a bowl, whisk together flour, baking powder, baking soda, salt, and nutmeg.
  2. In another bowl, combine eggnog, vanilla, and the egg. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a skillet over medium heat and spray with cooking spray.
  5. Pour batter onto the skillet, about 1/4 cup for each pancake.
  6. Cook until bubbles form on the surface and edges look set, then flip and cook until golden.
  7. Meanwhile, cook the turkey bacon until crispy.
  8. Serve pancakes warm, topped with turkey bacon.
