  • 2 cups cooked black beans
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 diced onion
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet, sauté the onion in olive oil until translucent.
  3. Add the cooked black beans, cumin, and garlic powder, and stir well.
  4. Warm the tortillas slightly to make them pliable.
  5. Spread some enchilada sauce in the bottom of a baking dish.
  6. Fill each tortilla with the bean mixture and some cheese, then roll them up.
  7. Place the rolled tortillas in the baking dish, seam side down.
  8. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  9. Bake for 20-25 minutes until bubbly.
