- 2 cups cooked black beans
- 1 cup shredded cheese
- 8 corn tortillas
- 1 cup enchilada sauce
- 1 diced onion
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- Preheat the oven to 375°F.
- In a skillet, sauté the onion in olive oil until translucent.
- Add the cooked black beans, cumin, and garlic powder, and stir well.
- Warm the tortillas slightly to make them pliable.
- Spread some enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the bean mixture and some cheese, then roll them up.
- Place the rolled tortillas in the baking dish, seam side down.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20-25 minutes until bubbly.
