Easy Avgolemono Soup

Ingredients

  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the orzo and cook until al dente, about 8-10 minutes.
  3. In a bowl, whisk together the eggs and lemon juice.
  4. Temper the egg mixture by slowly adding a ladle of hot broth, whisking constantly.
