Crockpot White Chicken Chili: Your Hassle-Free Comfort Bowl

  • 1 pound boneless, skinless chicken breasts
  • 2 cans white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cream cheese
  • 1/4 cup cilantro, chopped

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the white beans, corn, chicken broth, onion, garlic, cumin, chili powder, oregano, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken and stir in the cream cheese until melted.
  5. Garnish with cilantro before serving.

Notes

  • This chili can be made ahead of time and stored in the fridge for up to 3 days.
  • For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
