- 1 pound boneless, skinless chicken breasts
- 2 cans white beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cream cheese
- 1/4 cup cilantro, chopped
- Place the chicken breasts in the bottom of the crockpot.
- Add the white beans, corn, chicken broth, onion, garlic, cumin, chili powder, oregano, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken and stir in the cream cheese until melted.
- Garnish with cilantro before serving.
