  • 1 pound chicken breasts
  • 1 can (14 oz) coconut milk
  • 3 cups chicken broth
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon red curry paste
  • 2 green onions, chopped
  • cilantro for garnish

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add coconut milk, chicken broth, mushrooms, bell peppers, garlic, ginger, fish sauce, lime juice, brown sugar, and red curry paste to the crockpot.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  5. Shred the chicken and return it to the soup.
  6. Stir in green onions and garnish with cilantro before serving.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • For a vegan version, substitute chicken with tofu.
