Cranberry Mousse Cups – Fluffy Mini Christmas Desserts

Delightful and fluffy dessert cups filled with cranberry mousse, perfect for holiday celebrations.

Ingredients

  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese
  • 1 tablespoon gelatin
  • 2 tablespoons cold water
  • 1/2 cup powdered sugar
  • mint leaves for garnish

Instructions

  1. In a saucepan, combine cranberries and sugar. Cook over medium heat until cranberries burst.
  2. In a small bowl, dissolve gelatin in cold water. Let it sit for 5 minutes.
  3. Once cranberries are cooked, mix in the gelatin until dissolved. Allow to cool.
  4. In a large bowl, whip the heavy cream and vanilla extract until soft peaks form.
  5. Gently fold in mascarpone cheese and the cooled cranberry mixture.
  6. Divide the mousse into serving cups and refrigerate for at least 2 hours.
  7. Before serving, top with powdered sugar and garnish with mint leaves.

Notes

  • For a sweeter mousse, adjust sugar according to taste.
  • Can be made a day in advance for quicker serving on the day of your event.
