- 1 cup fresh cranberries
- 1/2 cup sugar
- 1 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1 tablespoon gelatin
- 2 tablespoons cold water
- 1/2 cup powdered sugar
- mint leaves for garnish
- In a saucepan, combine cranberries and sugar. Cook over medium heat until cranberries burst.
- In a small bowl, dissolve gelatin in cold water. Let it sit for 5 minutes.
- Once cranberries are cooked, mix in the gelatin until dissolved. Allow to cool.
- In a large bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold in mascarpone cheese and the cooled cranberry mixture.
- Divide the mousse into serving cups and refrigerate for at least 2 hours.
- Before serving, top with powdered sugar and garnish with mint leaves.
Notes
- For a sweeter mousse, adjust sugar according to taste.
- Can be made a day in advance for quicker serving on the day of your event.
