  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 6 cups beef broth
  • 2 cups carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, salt, pepper, and nutmeg. Mix until well combined.
  2. Form mixture into small meatballs and set aside.
  3. In a large pot, bring beef broth to a boil over medium-high heat.
  4. Add carrots and potatoes, cooking until tender, about 10 minutes.
  5. Add meatballs to the pot and cook until they are fully cooked, about 15 minutes.
  6. Stir in frozen peas and cook for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.
